Since living in New Zealand, we have become big fans of the country’s most iconic meal. New Zealand is known worldwide for their tender, free-range lamb and for good reason! Here is a quick, simple and delicious way to enjoy it.
- 500 gm free range lamb rack
- 4 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp parsley
- 1/4 tsp marjoram
- 1/4 tsp rosemary
- 1/4 tsp thyme
- 1/8 tsp cayenne
- Himalayan salt & pepper, to taste
- Preheat oven to 220°C (425°F).
- In a small dish, combine the oregano, basil, parsley, marjoram, rosemary, thyme, cayenne, salt and pepper. Set aside.
- Brush both sides of the rack with olive oil then sprinkle with the mixed seasoning. Place the lamb rack in a heated fry pan, searing both sides for less than 1 minute.
- Next, place your seared rack in a baking dish and bake for 15-20 minutes (depending how you prefer your lamb).
- Let the rack sit for 3-5 minutes, then slice into individual lollipops.
- Serve alongside sweet potato mash, your favourite vegetables and top with a dollop of delicious Basil Pesto.
