Spiced Lamb Rack

Spiced Lamb RackSince living in New Zealand, we have become big fans of the country’s most iconic meal. New Zealand is known worldwide for their tender, free-range lamb and for good reason! Here is a quick, simple and delicious way to enjoy it.
  • 500 gm free range lamb rack
  • 4 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp parsley
  • 1/4 tsp marjoram
  • 1/4 tsp rosemary
  • 1/4 tsp thyme
  • 1/8 tsp cayenne
  • Himalayan salt & pepper, to taste
  1. Preheat oven to 220°C (425°F).
  2. In a small dish, combine the oregano, basil, parsley, marjoram, rosemary, thyme, cayenne, salt and pepper. Set aside.
  3. Brush both sides of the rack with olive oil then sprinkle with the mixed seasoning. Place the lamb rack in a heated fry pan, searing both sides for less than 1 minute.Lamb Rack
  4. Next, place your seared rack in a baking dish and bake for 15-20 minutes (depending how you prefer your lamb).
  5. Let the rack sit for 3-5 minutes, then slice into individual lollipops.
  6. Serve alongside sweet potato mash, your favourite vegetables and top with a dollop of delicious Basil Pesto.
