Pumpkin Pie Pudding

Enjoy all the goodness of pumpkin pie, in less time, with less effort and without the grains!

  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp nutmeg
  • 1/4 tsp Himalayan salt
  • 1 cup pumpkin, mashed or canned
  • 2 free range eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1 cup coconut cream
  • 1 cup whipping cream
  1. Preheat oven to 180°C (350°F).
  2. Combine everything except the whipping cream, in a medium size bowl. Whisk until smooth.
  3. Pour the mixture into ramekin dishes then place ramekins on a large baking sheet.
  4. Bake for 45-60 minutes, until set.
  5.  Cool and top with whipping cream.
