Enjoy all the goodness of pumpkin pie, in less time, with less effort and without the grains!
- 1 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp nutmeg
- 1/4 tsp Himalayan salt
- 1 cup pumpkin, mashed or canned
- 2 free range eggs
- 1/4 cup maple syrup
- 1 tsp vanilla
- 1 cup coconut cream
- 1 cup whipping cream
- Preheat oven to 180°C (350°F).
- Combine everything except the whipping cream, in a medium size bowl. Whisk until smooth.
- Pour the mixture into ramekin dishes then place ramekins on a large baking sheet.
- Bake for 45-60 minutes, until set.
- Cool and top with whipping cream.
