Blueberry Apple Crisp

Blueberry Apple CrispThis makes for a delicious after dinner treat or an awesome breakfast, topped with a bit of full fat yogurt.

  • 3 apples, sliced with skin on
  • 1 cup blueberries
  • 1/2 can coconut cream
  • 2 tbsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp Himalayan salt
  • 3 tbsp flax meal
  • 1 cup raw nuts, crushed (almonds, hazelnuts, pecans, macadamia, etc)
  1. Preheat oven to 180°C (350°F).
  2. Thinly slice the apples and layer them in a large baking dish.
  3. Evenly distribute the blueberries over the sliced apple.
  4. In a small dish, combine the coconut milk, cinnamon, nutmeg and salt. Pour the mixture over the fruit.
  5. Sprinkle the flax meal over the fruit, then top with the crushed nuts.
  6. Bake for 40-45 minutes.
  7. Best served chilled, as this allows for full flavour infusion.
