This makes for a delicious after dinner treat or an awesome breakfast, topped with a bit of full fat yogurt.
- 3 apples, sliced with skin on
- 1 cup blueberries
- 1/2 can coconut cream
- 2 tbsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp Himalayan salt
- 3 tbsp flax meal
- 1 cup raw nuts, crushed (almonds, hazelnuts, pecans, macadamia, etc)
- Preheat oven to 180°C (350°F).
- Thinly slice the apples and layer them in a large baking dish.
- Evenly distribute the blueberries over the sliced apple.
- In a small dish, combine the coconut milk, cinnamon, nutmeg and salt. Pour the mixture over the fruit.
- Sprinkle the flax meal over the fruit, then top with the crushed nuts.
- Bake for 40-45 minutes.
- Best served chilled, as this allows for full flavour infusion.
